I decided to change my Oatmeal with Blueberries breakfast with Oatmeal Chocolate Chip Cookies instead... Blueberry Cocktail for my Blueberry consumption and I will have 2 Cookies with Apple Sauce nearby...
Reason Blueberries I need small to medium sized firm blueberries and I only would receive 1/3 of a container of these sized blueberries... the rest were either too soft or squizzy (gave those to the birds) or too big where the skin would stick to the sides of my teeth and it would take forever to remove them...
Ingredients
1 1/2 cups flour
3 cups large rolled oats
1 teaspoon salt
1 teaspoon baking soda
1 cup butter
1 cup light brown sugar
1/2 cup white sugar
2 eggs
3 teaspoons vanilla extract
1 1/4 cup chocolate chips
1. In a medium sized bowl whisk together flour, rolled oats, salt and baking soda.
2. In a large bowl, cream together the butter and sugars until light and fluffy. Add the 2 eggs and vanilla stirred together in a measuring cup to mix them up and combine thoroughly with the butter and sugars...
3. Add the flour mixture to the sweetened butter. Mix only enough to incorporate flour. Do not over mix... Fold in the chocolate chips.
4. Chill the dough thoroughly... about an hour or two... Form the cookies medium sized by making a small handful of dough and place it on the prepared cookie sheet two inches apart.
5. Preheat the oven to 350Farenheit. Lightly spray one cookie sheet with spray oil or line with parchment paper.
6. Bake until light brown around the edges. about 8 minutes I do... but I make medium sized cookies... and my oven is fast baking...
REMEMBER TO CHILL THE DOUGH THOROUGHLY FOR 1 HOUR OR TWO HOURS BEFORE BAKING THEM...
