I pack over a week before, taking my time and also writing a list. Hopefully this way I dont forget anything. Medication wise rather than taking boxes of everything (as mine don't need the fridge) I pre-pack into a one or two week supply of daily doses with morning, lunch, evening and night, plus extra just in case. Also umbrella to protect you from strong sun and rain if needed. And sleeping neck collar or pillow for airplane/transport to help with the comfort whilst sleeping. Oh and if going on flight longer than three hours I always where travel stockings as I am not very mobile and then take my shoes off, helps prevent the wonderful ankle swelling post flight.
